Overnight oats, I haven't had it in so long but it was so delicious! Before I went to bed, I took 1 cup of oats, 2 tablespoons unsweetened shredded coconut, 1/4 cup pecans, and 1-2 cups brown rice milk. Put it in the fridge overnight, and in the morning put on your favourite toppings. I added mango chunks and almond butter! Yum!!
For dinner:
I did a re-make of a Fresh bowl I had at their restaurant. I cooked 1/2 cup of brown rice in veg stock, then added about 1/2 cup of sliced cucumber, 3 tablespoons hummus, 1 teaspoon cayenne, and 1/4 of an onion. I mixed it all around and it was delicious!
Here are a few of the other things I've eaten in the past few days but had not gotten around to posting.
Spelt gnocchi in my homemade tomato sauce with 2 tbsp nutritional yeast and 1/3 cup rice milk. Added some asparagus and onions too! |
My spelt sweet potato and date muffins, topped with almond butter! A great snack. |
My favourite vegan mac n cheese. Recipe is posted on the blog. |
