Easy Peasy Guacamole

I used to hate avocados. That was until I had guacamole. But I could never make it myself, or anything like that of restaurants. But right here is a foolproof easy guacamole recipe that produces a tasty dipping snack!


Easy peasy guacamole:

3 ripe avocados, chopped
1/4 cup red onion, diced
1 tbsp lime juice
2 roma tomatoes, seeded and diced
pinch of cayenne
1 tsp sea salt
1 clove garlic, crushed

Mix all ingredients well. Some people like to mash their guacamole, but I like it super chunky. So mash to your desired mashiness.




It goes great with home-made flax crackers too :)

Strawberry Milk

More like strawberry colored. I didn't put quite enough strawberries for there to be an official strawberry flavour!

Delicious as always:

Husband calls this "the best almond milk i've ever had"
Strawberry Nut Milk:

1/2 cup nut (I did almond and macadamia)
1/2 cup chopped and pitted dates
1 vanilla bean
1 cup chopped strawberries (I did 1/2 but realize that I need more)
5 cups water

Blend and use your super-duper nut milk bag to strain. Keep the remnants for raw baking!



Vegan Freak

I spent the better portion of today reading my old vegan-how-to books, and ended up hating myself. Veganism was something that I felt enormously passionate about gave it up because I felt like conforming to social norms would be easier and more sociable. Yes, being vegan in a small town kind of makes you an outcast, but I shouldn't have put my social popularity above a very important ethic. Doing the easy thing and eating meat may feel okay now, but it's only because I've been relying heavily on rationalization and ignorance (along with the rest of the world). Here is a great excerpt from the book Vegan Freak by Rob Torres.


"If you're contemplating ethical veganism or you already are an ethical vegan, you've resisted years and years of training in our culture which tells you that animals are ours to experiment on, eat, wear, and abuse at our will. Something in you has told you this logic is deeply wrong, and knowing that, your conscience will likely not rest. In this way, the awareness of animal rights that accompanies veganism is a complex gift that's fraught with both possibility and pitfalls. You've come to see the truth about animal exploitation, and that's extraordinarily powerful. This view provides you with the possibility to move beyond animal oppression in your own life, and to encourage others to do the same. The pitfalls, however, come when you have to confront a culture whose dominant views are almost completely opposite yours when it comes to how animals should be treated. As any sociologist can tell you there are always costs to going against the established social order or going against "the way things are". You can be made fun of, you can be marginalized, and you can be made to feel stupid, radical , or even insane."

If nobody went against the social order and tried to change things, where would humanity be right now? So why are people marginalizing those that are trying to make a positive difference? Why are there assholes out there that give you grief because you are choosing to abstain from meat? Why does it bother them? It shouldn't right? But in choosing to abstain, you are breaking down the barrier that they have put up to make themselves feel okay about their nutritional choices, and not feel the guilt that some people feel when ingesting animals-- so they are now feeling guilty themselves, even if for a microsecond, and are taking it out on you.

So for all you vegans out there, don't listen to the asshole, you are far better for it.

Berry Cobbler + Before Pics

As promised, and to hold myself accountable to the blogosphere, here are my before pictures!

I tend to carry fat around my middle and upper back. So throughout the coming months I will lose it there first. I have big legs and I love it, that's why I can squat more than most men. It will be interesting to see the changes!

Now for the berry cobbler! Its RAW, delicious, and husband-approved!

Raw Berry Cobbler ( adapted from Ani's cookbook recipe)

Crust:
1 cup dry almonds
1 cup dry pumpkin seeds
3/4 tsp sea salt
1/2 cup dates
2 tbsp coconut oil
1/4 vanilla bean

Berry syrup:
1 cup blueberries
1/2 cup dates
1/4-1/2 cup water

Toppings:
2 cups sliced organic strawberries

For the crust, blend all ingredients except dates in food processor. Then slowly mix in dates (that are chopped) with your hands. For the syrup, blend all ingredients and thin out as necessary. Add the topping and syrup to the crust and enjoy!

Raw Granola

This is the first food I've made using the dehydrator. I originally put it through for 8 hours, then another 8. When making raw food I recommend you go into it with zero expectations, because if you have a cooked idea of granola its going to ruin how amazing your raw granola tastes.

I haven't quite mastered this recipe yet, so I won't post it until I am 100% satisfied with it. It still tasted great with my vanilla almond milk, but not perfect!

I'm off to make some mango cobbler and a delicious salad + shopping with my friend :)

Miso-sick soup

Husband woke up with a sore throat, so has been OD'ing on vitamins and speciality teas. He, along with the rest of the world, think that doing that will help, but you have to make sure to follow a vitamin and healthy eating regimen before! Dropping 20 vitamins in one shot might help minimally, but won't do much if you're already infected.

He asked for chicken noodle soup, but I hate that soup. So I made MISO soup instead :)

Miso-sick soup:

8 cups of water
1/2 cup miso
1 cup green onions, chopped
2 cups, sliced mushrooms, sauteed in oil separately
1 cup sliced soft silken tofu
2 sheets ripped seaweed

Directions:
Boil water. Once it reaches boiling mix in the miso and sauteed mushrooms. Cook for 2-3 minutes. Stir in the green onions, tofu and seaweed then serve!

My seaweed was salted, but if yours isn't, you might have to add in some soy sauce by taste.

Almond mylk

Making your own almond milk is totally worth the effort. The product you get tastes amazing! You have to put a lot of work into it, so I'm sure that makes it taste even better :) liquid gold!

Start with water, almonds, dates, and vanilla

End with delicious almond milk!

After reading other blogs I realized that I could have made my life sooo much easier by buying an almond milk making bag. Using that cheesecloth was comparable to running on a treadmill, or just running in general--> effing brutal. There are still some chunks in the milk, because like running, I wasn't very good at using the cheesecloth.

It's about 1/2 cup of almonds to 5 cups of water. There are plenty of variations and recipes online to get some variety too. Mine was sweetened naturally with smooth-as-butter dates and a whole vanilla bean.

The weather in Toronto is amazing! We've been cursed with retardedly cold weather lately so it's a nice change of pace. Definitely helps my slump!


These guys and I enjoyed the warm weather and went for a nice long walk. Lola stopped every ten seconds to be a little B, but her cuteness helped me look past that. That same line of thought applies to having such a hot husband ;)

Breakfast was a smoothie: 1 handful spinach, 1 cup of water, large chunk of ginger, 5 organic strawberries, and juice of 1/2 lemon. Delish!

For lunch I'll be having a salad that I prepared last night, I'll post pics later. Off to the gym and coffee with a friend :)
